Choose the Right Rice Flour
✔ Always use roasted rice flour (idiyappam flour) for the best texture.
✔ If using regular rice flour, dry-roast it on low flame for 3-4 minutes until slightly warm.
✅ 2. Use Hot Water for Kneading
✔ Boil water and add it gradually to the flour while mixing.
✔ Use a spoon to mix first, then knead with your hands when warm.
✔ Water should be hot but not boiling, to prevent lumps.
✅ 3. Add Coconut Milk or Oil for Extra Softness
✔ A teaspoon of coconut oil in the dough prevents dryness.
✔ Using coconut milk instead of water gives a richer and softer texture.
✅ 4. Knead to the Right Consistency
✔ Dough should be soft and smooth, not sticky or too dry.
✔ If cracks form while pressing, add a little warm water and knead again.
